Cook's Illustrated (America's Test Kitchen) has found Walmart's Tramontina Gourmet line of cookware equivlent to ALL-CLAD at one third the cost. Cook's illustrated (CI) cut-through the Tramantina Gourmet cookware and found that it is full tri-ply. The tri-ply sandwich of 18/10 stainless - Aluminium - 18/10 stainless runs throughout the cookware from the bottom to the walls. CI found its heat distribution and cooking characteristics the same as comparable ALL-CLAD pieces.

I can see why the ATK folks recommend this skillet. At 1/4th the cost of their best pan choice, I can buy four of these.
It has done an excellent job with steak, skillet roasted vegetables, building a fond and stock base for Chicken and Dumplings in a slow cooker, etc. so far. Soon I expect the same performance when I put it in the oven to roast a chicken after I have browned.
I only dropped the durability rating because of my short ownership time. ATK gave a top rating on this.

Picture on the item page shows a mostly flat bottom. Pan that arrived was only flat for a radius of about 3 inches from center, then sloped up, almost like a wok.

I had to experiment with the heat setting and scorced the pan in the process, but I think I pretty much have it now at a notch and a half above medium for something I would normally cook at medium high.

This pan had high ratings for value in Cooks magazine and the value can't be beat. The pan heats up quicker and more evenly than we are used to. The only drawbacks are that it is a bit heavy (as Cooks noted) and it isn't non-stick (obviously). Clean up isn't much more difficult. And the benefits far outweigh these drawbacks. We like the triple-clad construction over some pans that add a plate (e.g. copper) on the bottom because there is no seam on the bottom of these pans. As far as durability, time will tell if the rivets hold well when the pan is handled (and dropped) over several years. Walmart's Site-to-Store beat their predicted time. And did we mention its value?

was happy after i cook while on it, cam acroos bacon fry some up, say in my mind omg it is burning botom of pan, brown crust, was scared will not come off when washed?....surpised right after bacon was done, washed right away with blue scotch bright, 3 turns in circle came off so nice, very pleased use it for noodle even shallow quick coook, saving for big set.induction cooking is controled coooking, nice to to have flame amen ..........i recomend it just not get crazy and put on high follow instucions of pan , take ur time works well take care merry x mas dec 19 2012

Too bad you chose not to even give this cookware a fair chance. ALL stainless steel will "stain" when cooking starchy vegetables, most beans, and pasta. I have rather expensive commercial kitchen stainless and, yes starches will leave a rainbow-ish coloration on the bottom of the pots. No big deal! Just use any stainless steel cleaner (Barkeepers Friend is an excellent product) and clean it. If skillets and saute pans are deglazed while hot with water, stock, wine, etc. the fond stuck on the bottom loosens easily and becomes a flavorful part of your sauce for the finished product. I keep a plastic scraper handy by the sink to loosen any persistent particles stuck to a pan; with that and a bit of effort (grandma's 'elbow-grease') the pans are spotless. A little effort in exchange for much safer cookware is a very good trade-off. I would never use anything but stainless for stovetop cooking; those chemical-coated products are dangerous!!! (And it is being proven the non-stick coatings as well as aluminum are at least a contributor in the epidemic of dementias in the generation who used them extensively.) By the way, I am in the process of replacing my 'commercial' stainless with this Tramontina cookware because of their superior quality and heat conduction.

It appears to be triple clad on the bottom and on the sides. Better than just clad on the bottom. Beware because Tramontina does make a base clad pan that is almost identical to this one. So far, it is a great pan, especially for the low price. It did become somewhat marked with dark areas after a few uses, but that is probably the case with any pan. I do love this pan, and highly recommend.

nice weight not flimsy, sits level on flat surface, heats evenly, nice thick bottom, cooks and fries like a dream, high heat is not needed only medium to low heat, heats quickly and maintains the heat, easy clean up, looks just as nice as the Calphalon which is $99 for the 12" pan. For the price this pan is an absolute steal!!!! Will be buying the 10" in the near future.

I love this skillet. My old skillet was a large aluminum skillet and I threw it out. I had no idea that the taste of food in this skillet would be better than when cooked in the old one. This skillet is easy to clean, cooks evenly, and is big enough for all my one-pan meals. I love it. The only thing I would change is to make the handle a bit wider - it is a little narrow, but really, so what. Everything else about this pan is wonderful. I am looking at other pans from this manufacturer now, as well.
