This book isn't so much a recipe book, but a book that describes various cooking and food storage techniques. For instance, page 99 tells you how to store used cooking oil so that it can be used again. He shows a MacGyver type rig to strain and store oil that was easy and cheap to replicate and is worth the price of the book alone in savings.
He explains the basic why's and how to's to frying, searing, grilling, roasting, brining, sauces, eggs & microwaves. If your totally inept in the kitchen, this book gives you the ability to be a more confidant cook.

Alton Brown really explains why his cooking methods work and the science behind it. If you have ever seen his cooking shows on Food Network, the book is even better!! This would be a GREAT book for a new bride or a beginning cook but it is also a great reference for experienced cooks as well.

I have always loved Alton Brown's Show, so I bought his book. I enjoyed reading it. Lots of information that I'm sure I'll refer to and the same humor that the show has. I hope he comes out with some more cookbooks.

This is great. It has a ll the wit and humor that AB brings to his tv shows, as well as all the nice science bits. It goves a basic primer on most methods of preparing food (except for baking. Thats another book) The book is split into sections not by the food exactly, but the method of preparing it.
He also goes through the basic food animals and shows what cuts come from where, and what each cut should be used for.
But most of all, this book gives you the courage to be unfettered by the restrictions of recipes. It gives you a base of knowledge to invent for yourself. If you don't want to, there's easy to follow recipes at the back of every section.
