Made organic grape jelly so far & it was a breeze! My boyfriend & I are loving this machine so far and cannot wait to try different recipes & to share with friends/family! Follow the directions exactly. I used Sure Jell in my 1st and 2nd batch of strawberry jam and it never set up. It did get thicker, but was still runny-but still delicious. You must use Ball Classic Pectin as stated in the directions! When I used the Ball Classic Pectin, my strawberry jam came out beautiful, thick, and delicious! Love the easy clean-up finish in the cooker. Nothing negative to say about this equipment.

Nice Looking kitchen appliance, used once and stopped working would not turn on again. Waited the time they told me to, but would not work again. I lost $15.00 worth the strawberries Pectin and sugar.

I can not say enough good things about this product. It has taken all of the guess work out of jam and jelly making and the sweat from standing over a hot stove stirring stirring and stirring for what seemed like forever. Some day, I hope they figure out how to make one of a larger capacity, but for now, this is great!

I have diabetes and i love jams the people at ball have recipes and they are good ones and they are clear about you following their directions to have fool proof jams and jelly but i beg the pardon when it comes to me and my husband this is what i did i washed my machine, i sprinkled in first 3 TBS of sugar free pectin, 5 cups of smashed banana's, 2 cups of no sugar added apple sauce, 1 tsp of allspice, 1 tsp of nutmeg, and 1 TBS of cinnamon, and little packets of equal sweetener measuring 1/3 of a cup, 2 TBS of butter, 3/4 cup of pecans crushed, let the ingred. mix for the 4 minutes when it beeps add the equal sweetener and then let it finish even though as diabetics we have to be careful with our bananas but people let me tell you this turned out perfect i canned 8 small jars of it, its great i cant say enough about it and this was my very first time.

I made pomeganate jelly from 100% pure juice as my first project. I made the low sugar jelly, using BALL brand pectin. This jelly had the consistancy of jam and is totally delightful. The machine took all the worst part of jam/jelly making away---the stirring. I couldn't be happier with this machine----next up, blueberry jam from my backyard bushes!

This is a great product, and I love it. I'm making critical observations here of the RECIPES, not the unit...
After making several batches with the FreshTech Jam & Jelly maker, using the recipes in the book, I've made some observations:
1# The products are too hard set #they gel right in the pan, or as they're being scooped out#, to the point where the jam or jelly virtually cannot be spread on bread.
2) The standard recipe is far too sweet. Sweeter than anything you can buy in the store, sometimes the jam or jelly is so sweet, it tastes like fruity candy, not jam or jelly. Even my husband, a sweets-lover, won't eat it. Since I'm hypoglycemic, more than a teaspoon will send my blood sugar on a roller coaster ride, as I learned from experience...
So, solution! This is based on the low-sugar recipes ONLY...
1) The hard-set is easily dealt with by increasing the amount of juice/fruit to 4 cups, instead of 3. Do not change any other quantities. This results in the finished product still being liquid in the pan at the finish, so it's easy to fill the jars. Less foam, too, don't ask me why... When completely cool, it forms a beautiful medium set gel, easy to spread, but if you take a spoonful out, that scoop-out is still visible there in the container. It doesn't flow to fill it in.
2) Don't use the the full-sugar recipes unless you like candy. A lot!
All in all, I'm extremely please to have this unit, and see using it a great deal in the future #I've even made spaghetti sauce with it...) So don't be afraid to experiment! The batches are small enough that if something doesn't work, you haven't wasted a whole day and a ton of money and ingredients.

I loved it! I'm used to making 8 jars at a time and it only makes 4 but the time I save it well worth it. Plus it saves my feet and back from hurting from standing in one spot for so long stirring. I have already recommended it to alot of my friends that can.

I made two batches immediately after purchase; one pomegranate jelly and one strawberry jam. They both came out wonderfully. The machine was also very easy to clean.

I don't work with pectin. The first time I made strawberry jam, it looked very soupy and I was skeptical - thought I'd done something wrong, even though I measured everything carefully. I ended up adding more pectin and sugar and boiling it on top of the stove to make it thicker (it turned out fine).
The second time I decided to go with it the final results, ladled the soup into my jars, sealed them in my steamer canner (another recent purchase), and hoped for the best. The next morning, all the jars were sealed, all the jam was gelled, and the finished product was fantastic. My husband and kids loved it.
I made peach jam this weekend - same soupy results out of the pan, but perfect jam the next day. Be sure to follow the directions carefully, measure carefully and be prepared for soup. But also be prepared for delicious jam once it cools and sets. Clean up is easy and I can do other things while the machine does all the work.

This is a good cooker, but, I was under the impression that once it cooked the jam it was ready to put in jars and store away. After I recieved the cooker and read the directions I was disappointed to learn that this was ONLY a cooker and that after you cooked the jam in the jam maker you still had to can the jam in a canner which meant more time and another expense buying the canner. I returned the Jam Maker as I did not feel it was worth the high price for only a cooker.

I have found in the past that jams and jellies DO NOT HAVE to be processed in a canner. I ALWAYS fill the jars, wipe and seal, screw the bands on TIGHT, invert on a folded towel with the other half of the towel flipped over the top. Leave upside down for 5-10 minutes, then flip right-side up. leave in the towel for a while longer while you hear the "POP" of the lids sealing. I have NEVER used a canner.
